Savoury Madeleines & Financiers – Madeleines & Finanzieri Salati

Music: When I’m Sixty-Four, The Beatles. Madeleines and financiers are the most childish of sweet treats, so this savoury version is perfect for nostalgic moments and talks with old friends.


50 gr flour

1 big egg

2 tsp baking powder

1 pinch Fleur de Sal

1 pinch black pepper

1 red chilli, cut into small pieces

2 Tbs extra virgin olive oil

1 Tsb butter, melted and cooled

2 Tsb Pecorino cheese, grated

2 Tsb water

1 Tsb sesame seeds, toasted

Mix all the ingredients together in a big bowl, then place it in the fridge for about 30 minutes. Pour the mixture into the molds and bake 4 minutes at 220°, then another 8 minutes at 180°.
