Concord Grape Focaccia – Schiacciata con l’uva fragola

Concord Grape 800 Gr/ 1 Kg
Flour 400 Gr
Fresh Yeast 25 Gr
Extra Virgin Olive Oil
Mix together the flour, 3 Tsb sugar, 1 pinch of salt and the fresh yeast (dissolved in a glass of lukewarm water). Knead for about 10 minutes, adding water when needed. Cover and let rise for 1h30/2h. Then divide the dough into 2 parts (one should be bigger than the other). Lay the biggest on a rectangular pan, covered with well-oiled baking paper. Top with grape, a little rosemary, and a few Tsb sugar. Cover it with the remaining dough, sealing well. Top with a little oil and sprinkle with sugar. Bake in a 200° C oven for 30/35 minutes.
