Chilli, Pear Chocolate Cake – Torta Piccante al Cioccolato e Pere

Music: Time, Tom Waits. The moon is in the street, the wind is making speeches and the rain sounds like a round of applause. These aren’t my words, of course, but belong to that music genious – Tom Waits. His sweet, romantic words crash into his beautifully harsh voice with the same fierceness of chilli pepper towards chocolate and pear. I think this cake was made for this song.

Ingredients:

100 gr butter

70 gr Venchi chilli pepper chocolate

2 pears, diced

100 gr almond flour

50 gr flour

20 gr Venchi cocoa powder

1 pinch Fleur de Sel

1/2 tsp baking powder

2 eggs

60 gr brown sugar

Melt the butter and the chocolate together, and just before everything is completely melted, add the diced pears, stirring carefully for about one minute, until they’re quite soft. Then turn off the heat, and let cool. In a big bowl, mix the flours, the cocoa powder, the salt and the baking powder. Whisk the eggs with the sugar until pale and then add to the chocolate mixture, beating well. Incorporate the two mixtures together and beat well but briefly. Pour into a mould covered with baking paper and bake at 180° C for about 30-35 minutes.
