Buckwheat & Orange Marmalade Cookies – Biscotti al Grano Saraceno & Marmellata di Arancia

Sometimes it looks easier to please the world than it looks to please yourself – these cookies take only a few minutes to make and bring long-lasting joy.
200 gr buckwheat flour
80 gr flour
120 gr butter
100 gr sugar
1 tsp baking powder
1 pinch of salt
Cream together the butter with the sugar. Add the egg, and then the flours and the salt. Place in the fridge for 30 minutes, then lay the dough and cut into cookies with a cookie cutter. Press each cookie a little in the middle and fill it with some orange marmalade. Bake at 180° C for about 15-20 minutes.
