Apple Crumble Slice – Tranci di Crumble alla Mela

Music: Teenage Dream, Katy Perry. If I had to think of something sweet that recalls girlhood, I’d probably choose some fresh and creamy treat (low calorie, of course!). Popsicles would be perfect, except that I’m not a big fan of popsicles and don’t eat them in my usual life. If I had to think of something that recalls my teenage days, I’d choose something buttery, warm and with a lot of cinnamon in it. My friend Giulia and I love cinnamon, and because we spent most of those days together, our teenage dreams are made of cinnamon clouds, vanilla skies and gingerbread… boys – you can always count on them, and they’re never enough. I know it’s weird, but we’re like that! Which is the food that best recalls your teenage self? Let me know, I’m so curious!

Ingredients:

Base:

40 gr sugar

110 gr flour

1/2 tsp baking powder

1 egg, lightly beaten

500 gr butter, melted

your favourite jam

1 apple, diced

cinnamon

Crumble topping:

110 gr spelt flour

40 gr sugar

70 gr cold butter, chopped

Mix together the sugar, flour, baking powder, egg and butter until well combined. Press into the base of a mould lined with non-stick baking paper and bake at 180° C for 10-15 minutes. In the meanwhile, mix the diced apple with the grounded cinnamon in a bowl. Remove the base from the oven and spoon some jam over it, then top with the diced apple and the crumble topping. Bake for another 20-25 minutes or until golden.
